This beer is our first opportunity to showcase the wonderful hops of Brook House in the context of our Scottish barrel fermented pale ales. Brook House take a great deal of care of their hops, both in the growing and the processing, which gives them a punch you’d be surprised by if you’re used to calling English hops ‘twiggy’.

Of Myces and Men is a 6.2% pale ale brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges.

It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation.
