Burning Sky's anniversary beer is a Saison fermented and aged on French Chardonnay barrels. The result is mild and fruity with a slight sourness and refreshing oaky, dry finish.
Burning Sky is a long term brewing project set up by former Dark Star head brewer, Mark Tranter. An ambitious progam of barrel-ageing and experimentation with wild and erratic yeasts is well under way as we wait with bated breath to taste the results in the form of slow developed Saisons and Flemish Reds. Mark asserts that Burning Sky will take 2-3 years to be ready to realise it's full potential when careful blending of the aged beers will take place with the aim of getting as close to brewing perfection as is humanly possible.
