One of our annual seasonal blends, this year's Hedgerow Blend was made with a sour beer base, vs saison bases we've used in the past. By using only our mixed culture of yeast & bacteria, the base beer itself was more complex, even before the fruit additions. We used a mixture of foraged wild damsons, plums, elderberries & blackberries, alongside the usual wild hops, to enhance the sour, which has resulted in a more rich, powerful fruit hit with a tangy, jammy sweetness & a tannic, dry finish.
