Melancholia is an open-fermented, can-conditioned farmhouse-inspired ale. One of our favorite ‘clean’ Saisons that we produce. Awesome farmhouse phenolics pair perfectly with the rye and spelt grist. We patiently can-conditioned this batch giving it those nice tiny bubbles and added effervescence to be expected in Melancholia.
