Each pack will contain approximately 200g of each of the cheeses listed below
Baron Bigod Cow/Soft (Uk)
Earthy and full-flavoured, with protracted finish. A cheese in the style of Brie de Meaux, made by Jonny Crickmore at Fen Farm. From the cutting of the curds to using the traditional pelle-à-brie ladle, everything is done by hand
Colston Bassett Stilton Cow/Blue (Uk) (v)
Rich and velvety smooth. Sweet with mineral tones, and winey spice. Made under the watchful eye of Billy Kevan, only the fourth Head Cheesemaker of the dairy since 1920, and a watchword for consistency. Colston Bassett Stilton is the only remaining exclusively hand-ladled Stilton.
Westcombe Cheddar Cow/Hard (Uk)
Complex and grassy. Here is the home of ‘Tina the Turner’, the UK’s first Cheddar turning robot. Tina patrols the rows of Cheddar, and flips each cheese over to ensure even maturation.
Gorwydd Caerphilly Cow/Territorial (Uk)
Fresh but not quite so crumbly, with a savoury note of mushrooms near the rind. A ‘Super Gold’ Winner, voted 12th best cheese in the world at the 2022 World Cheese Awards. Gorwydd (pronounced ‘GOR-with’) is Welsh for ‘edge of a forest’. The judges saw the wood for the trees
Sparkenhoe Shropshire Blue Cow/Blue (Uk)
Dense but crumbly, and mellow but savoury. Britain’s only raw milk Shropshire Blue, inspired by Stilton but more akin to Cheshire in texture. Made by Will Clarke, son of David and Jo Clarke, celebrated makers of Sparkenhoe Red Leicester.
